A New Standard in School Dining

The Lauries Canteen has seen significant improvements and continues to make a meaningful impact on the daily life of students on campus. 

While the physical space remains the same, the environment within has been transformed through a renewed focus on quality, nutrition and service. The Food Services team, led by highly qualified and award winning chefs, has reshaped the way students and staff experience food each day. 

The introduction of a refreshed culinary leadership structure has elevated the canteen to a standard more commonly seen in professional kitchens than traditional school settings. Under the leadership of Food Services Manager David Nield, the team has focused on delivering food that is both appealing and nutritionally balanced, while maintaining consistency at scale. 

The team has introduced a new menu that is healthier, higher in quality and more diverse from week to week. Students now enjoy meals that balance nutrition with flavour, including fresh curries, salads, stir fries, wraps, hot specials and rotating international dishes. 

“We wanted to create healthy food that the boys and staff genuinely look forward to eating,” said David. 

MORE FOOD, LESS WASTE 

One of the most noticeable improvements, and a clear favourite among students, has been the increase in portion sizes and overall food availability. 

“Another major focus for us was portion size. We are producing more food than before, but wasting far less,” David explained. 

“It’s about being efficient, thoughtful and respectful with what we use.” 

THE WESTCOURT CAFÉ: A NEW HUB ON CAMPUS 

A major addition to the College’s food landscape is the newly established Westcourt Café. Senior students and staff now have access to barista made coffee in the mornings, while the space also functions as a secondary service point for Middle School students during morning tea and lunch. 

This dual-purpose design has eased congestion at the main canteen, improved traffic flow across campus and reduced wait times allowing students to enjoy their breaks more comfortably. 

With a strong emphasis on quality, sustainability and the student experience, the future of the Lauries Canteen looks bright.
